This year Mal and Val have decided to start a healthy eating and fitness initiative on La Vie Cherie.com. Mal's goal is to get Val to have more healthy eating habits. And Val's goal is to teach Mal to cook.
So, we're here at The Classy Gourmet with Colleen Cleek to teach us how to cook healthy food quickly.
Colleen's first dish is homemade pasta. Colleen says, "If you want to eat healthy you need to learn to make it yourself utilizing fresh spinach and low-fat ricotta cheese." That way we've got the great flavors, but it's still healthy.
The next dish is fast, fabulous and easy to prepare. It's red beans and rice with chicken. It's a one pot wonder so you can get back to what you were doing a lot quicker.
To prove that grilling's not just for the guys, Colleen has some grilling tips as well. Colleen says, "You want to grab a book written by a female. You want to get your meat thermometer and your tongs and head out for summer and spring grilling.
To get creative you can add pork and white beans to turn regular chili into a fabulous dish.
And, to top off the perfect meal Colleen recommends the perfect glass of red wine to maintain a healthy lifestyle.
